I go to the uninstall page for Mac. It says there's a link to a third-party app at the bottom of the page? I scroll down and there's no link on the page.

That is old information. The page was updated once to my knowledge, but that and some other updates were lost when the entire site was moved from the Stanford servers.
Current information is that the Uninstaller was added to the client installer several versions and years ago. Go to the Folding@home folder in your Applications folder, the uninstaller is located inside it. It will remove the client but not the data files. For that you go to the system Library folder and look within the Application Support folder for the FAHClient folder which holds the logs, any WUs being processed and the folding cores.
