The Folding@Home news page reports that it is fighting Coronavirus (You'll just have to trust me; I would post a link but the forum software doesn't let me).
However, on the web control where I can choose a disease, the only specific options I see are: Alzheimer's, Cancer, Huntington's, and Parkinson's.
How do I make sure my compute cycles go preferentially to fighting COVID19?

You don't, at this point.
1) it would take a new client to add more options.
2) while the bio chemists are working on which proteins to study, none are ready (yet) for home folding.
This is an excellent time to find tune your rig and be ready. The worst that can happen is you help cure cancer instead.

Once it is ready, will the new option appear in that drop-down? Is there anything special I need to do to know when it's ready and mark it as preferred?

I'm not sure that the client will be updated soon enough to add new cause to the list. So if you don't want to miss Coronavirus projects, select "Any" cause.
