I have an old Quadro 500 that I threw into my rig as a second GPU for folding and stuff.
I can't seem to find it at all in F@H, it's just not recognized and I can't fathom what is going on.

Welcome to the folding support forum.
The Quadra 5000 is too old and does not support the necessary features for folding any more. While it supports double precision (FP64), it only supports OpenCL 1.1 and OpenCL 1.2 is required.
