What are WU/Points used for?
So I'm just starting out and I am not able to find anywhere what work units or points are used for. I'm assuming that they are some sort of reward system for running the folds, but what do you do with them once you get them? Anything?

Nothing.
Points can help you judge which configurations do the most science. More points is almost always more/better science.
You can have friendly competitions about who can make the most points.
As a general rule, academic bio-chemists don't HAVE anything they could reward us with.

Glory and honor
And yes: useful as performance indicator, system issues indicator, and as mentioned for team competitions within and across teams.
Did I mentioned: Glory and honor ?

Also, I believe a big GPU manufacturer team still offers rewards for its members' points, as do the coin teams. However, that is completely independent of the scientists and Stanford.

You can also "convert" your points into cryptocurrency, for example https://curecoin.net/
