I did the exact same thing this spring. The 470/570 (Polaris 10/20) cards are basically two 460/560(Polaris 11/21) GCN 4 dies combined. I've running three 460/560s for a while for folding. The crypto miners were selling them for a song and they do way better than older cards.

I guess startup peak RAM usage is not so important as it can be swapped temporarily. As long as you have enough swap space available. Yes! Memory usage on windows and linux is similar. On my linux box with 8 gigs of ram, folding on the CPU and 2 gpus has periodically paged the GUI out to swap. Takes a few minutes to log back in. I run my 3900x bone stock with PBO off using a Sythe Ninja 5 and case with lots of big slow fans and a rx 560. Hopefully more success stories follow. I have been using the proprietary drivers without issue, but they are so painful to get installed and working.
