MacOS FAHClient missing grayed out config options

I'm sure this has been experienced before but I'm unable to find a thread, so i'll repost.
1. I've got 3 identical 12-core Mac Pros, and have 2 of them running as available, with no issues whatsoever, on 7.5.1x86/64bit.. OSX 10.12 and 10.13..
2. the third unit (also on 10.12) **WAS** running well, but for some reason, i lost ability to configure, and can't resolve it.
So the issue is I can't change my account (tabs are missing), can't stop/start/control the client.
An additional symptom: the web-based control never loads/mounts.. so it attempts but times out...
Steps attempted:
1. uninstall/reinstall using the included uninstaller.
- unsuccessful - it's apparent to me that the client & config data is NOT being deleted using the included uninstaller.
2. 1) above, then manual uninstall attempt. i deleted the /Library/Appsupport/FAHClient folder...
- Unsuccessful. same issue.
3. 1) above, then 2) above, then run launchctl unload (for org.foldingathome.fahclient.plist)
= unsuccessful - althoughh this DOES stop the client from rebooting immediately..
4. 1) above, 2) above, 3) above, AND run: sudo rm /usr/local/bin/fAHClient AND run sudo rm /usr/local/bin/fAHCoreWrapper
- Unsuccessful. same issue.
5. searched 'launchctl list' for ANY possible plists which might be running (after having unloaded it)...
- found none.. all but two of my plists are apple, and the other two are entirely unrelated.
So every time I reinstall, the unit fires back up with the same config (it still has a previous system name which I entered in the config tab, which hasn't deleted, despite my deletion of the config folders in /libary/appsupport/fahclient)...
Any thoughts?
i believe there's a hidden plist that's still loaded, OR a hidden/unlisted location where config files are being kept.
What am I missing? this one's driving me nuts!
