Is my internet data will use only when I download and upload my(part) or it use my data usage to work on the project?
If so how many GB will be use/month? (I have a limit of 120GB/month)
Can I pause the project when I use the computer and resume when I am off?

Welcome to the folding forum.
Data is only transferred when work is downloaded and completed WU's are returned. The internet connection is not used in the processing of the WU. There are some minor additional onetime downloads in the form of project descriptions, the GPU gray list, and the folding cores to process WU's.
As for the amount of data that will be used, I have not been keeping track of that myself. Hopefully someone else may have some figures for that.
Finally, yes the project can be paused and resumed. In fact the default settings have GPU folding only active when the system is "idle". CPU folding is set to run at the lowest priority, so may not affect your normal usage. There are deadlines, so depending on your your setup you may have difficulty meeting those deadlines if there is a lot of pausing.

folding 24/7 my rigs transfer about 0.75 GB per day. these are rigs with four gpus in them so your average may be considerably less.
