Best way to set up this system?

I've just returned to folding after a break of a couple of years. My main PC is a Llano A8-3870K with an HD 7770, which was easy to set up.
I will be rebuilding an old PC over the weekend. The configuration will be:
Motherboard: Maximus IV Gene-Z
CPU: G2020 (dual core)
GPU: GTX 295
I will be folding with both GPUs of the GTX 295. Will each GPU use a separate CPU core? If not, will there be any poinnt to folding on the one remaining CPU core? I will eventually be upgrading the CPU, and I know I will then be able to fold with it, just unsure how many cores the GPU client uses.
Also, the motherboard is faulty and only sees memory on one channel. Will I be better with a single 8 GB 1600 MHz module, or a pair of 2 GB 2133 MHz (in single channel) for folding?
