I guess FAH will not fit these?

That's a good point and after rereading the steam direct 100 dollar process it replaces the current greenlight process.
So now it really looks like you only need to pay the 100 dollar, download the Steam SDK and create a folding@home steam package, and deploy it to steam.
The folding@home steam package would include the folding@home binaries for windows or linux or MacOS.
If folding@home releases a new client version then the steam package needs to be adapted and the steam users get the new fah client through steam automatically.

What about licensing? May I redistribute the original folding@home binaries on steam?
A second part is to create the folding@home steam page, maybe copy some party of the FAH website.
Third part and more complex and optional would be to create steam achievements.
It needs to create another executable which reads the fah user name from config file and check the fah user stats and create steam achievements for points reached, work units finished, number of projects worked on ...
Edit: I heard from Steam Greenlight that it will take some weeks until the Steam Direct process will go public with new guidance how to setup.

Yes - while you could just redistribute the FAH client as is on Steam, what you really want to do is foster some friendly competition through Steam's achievements and leaderboard functionalities.
