Docker instances will always have limitations to protect the host and other users on the same host. If you need total control of the hardware, you'll need dedicated hardware.

Check that the WUs aren't expiring ... Anything weaker than a RPi 5 might not make the deadlines.

It could be failing system RAM too ... did you run a few Memtest86+ passes to check it ?
